A few days ago, I shared that I was making pumpkin cream cheese bread with my followers on Instagram, and several of them let me know they wanted me to share this tasty recipe with them. Ya'll this is the perfect treat to satisfy those autumn pumpkin cravings! It pairs nicely with your coziest blanket and a cup of hot, fresh coffee ;)


2 eggs

3/4 cup vegetable oil

1 cup sugar

1/2 cup brown sugar

1 teaspoon vanilla

1 3/4 cups of all-purpose flour

1 can of pumpkin puree 

2 teaspoons pumpkin pie spice (although I may have added a little extra )

1/2 teaspoon nutmeg

1/2 teaspoon group cinnamon

1 teaspoon baking soda

A pinch of salt

1 block of cream cheese

1 cup of powdered sugar


How to:

Start off by pre-heating your oven two 350 degrees.


In a large bowl, mix your eggs, oil sugar and vanilla together using a beater. I used my Kitchenaid Stand Mixer for this.



Next, I'll add in my can of pumpkin puree, and mix it well.



Next, I'll add in all my dry ingredients such as flour, both my brown and regular sugar, my baking soda, my cinnamon, pumpkin pie spice, my nutmeg, and a pinch of salt. Then I'll mix all of this together. Once mixed, pour HALF of this mixture into a loaf pan (make sure to grease your pan! I forgot to do this, and my bread stuck badly) . Save the rest of the mixture for later. 




Now, its time to mix your cream cheese and powdered sugar in a separate bowl.



Now add the cream cheese mixture to your loaf pan, smooth it out using a spatula. Now, pour the reaming pumpkin. mixture over top. Once your oven is pre-heated, bake for an hour (my oven took a little longer). To test if it's done stick a toothpick in the center. When the toothpick comes out clean, your bread is ready!

Let cool for a few minutes, then wrap it plastic wrap. I do this to help keep my bread soft and moist :) Enjoy!
